It slides under a pancake, an omelette or a piece of fish without breaking it, and the slots let the oil drain back into the pan.
The thin blade is the point: it bends just enough to follow the curve of the pan and get under delicate food, which a thick plastic turner cannot do. Use it for fried eggs, fish fillets, burgers and anything you want to flip in one piece, and for lifting biscuits off a baking tray.
